Prepare the Aubergine
Slice the aubergine into 1/2 inch thick rounds. Sprinkle salt on both sides and let them sit for about 30 minutes to draw out moisture. Rinse and pat dry.

Prepare the Breading Station
Set up a breading station with three bowls: one with flour, one with beaten eggs, and one with breadcrumbs mixed with black pepper and Espelette pepper.

Bread the Aubergine
Dredge each aubergine slice in flour, dip in the egg, and then coat with the breadcrumb mixture.

Fry the Aubergine
Heat the vegetable oil in a large skillet over medium-high heat. Fry the breaded aubergine slices in batches until golden brown and crispy, about 3-4 minutes on each side. Drain on paper towels.

Prepare the Herb Buttermilk Dressing
In a bowl, combine buttermilk, chopped fresh herbs (such as parsley, dill, and chives), salt, and pepper to taste. Mix well and set aside.

Drizzle the fried aubergine with honey mixed with a pinch of Espelette pepper. Serve hot with the herb buttermilk dressing on the side.
