    Make the Mornay Sauce

    In a saucepan, melt 2 tablespoons of butter over medium heat. Add the flour and whisk for about 2 minutes to form a roux. Gradually whisk in the milk and cook until the sauce thickens. Season with nutmeg, salt, and black pepper. Stir in half of the Gruyere cheese until melted and smooth.

    Assemble the Croque Monsieur

    Preheat the oven to 200°C (400°F). Spread a thin layer of butter on one side of each slice of challah bread. On the unbuttered side, layer bistro ham, a generous amount of Mornay sauce, and top with remaining Gruyere cheese. Close the sandwich with another slice of bread, buttered side out.

    Cook the Sandwich

    In a skillet, cook the sandwiches over medium heat until golden brown on both sides, about 3-4 minutes per side. Transfer to a baking sheet.

    Finish in the Oven

    Once all sandwiches are cooked, place them in the preheated oven for about 5-7 minutes, until the cheese is bubbly and golden.

    Cut the Croque Monsieur in half and serve immediately with frites on the side.
