Prepare the Chocolate Mousse
In another bowl, beat the egg whites until stiff peaks form, then gently fold them into the chocolate mixture until fully incorporated. Pour the mousse into serving glasses and refrigerate for at least 4 hours or until set.

Make the Cacao Crisp
Preheat the oven to 180°C (350°F). Spread cacao nibs on a baking sheet and toast in the oven for 5–7 minutes until fragrant. Let cool.

Prepare the Berry Coulis
In a small saucepan, combine fresh berries and powdered sugar. Cook over medium heat for about 5-10 minutes until the berries have broken down and the mixture is syrupy. Strain to remove seeds if desired, then let cool.

Assemble the Dessert
Once the mousse is set, top each serving with berry coulis, a dollop of whipped cream, and sprinkle with cacao crisp.
