Prepare the Crust
Preheat the oven to 350°F (175°C). In a medium bowl, mix together the graham cracker crumbs, melted butter, and granulated sugar until well combined. Press the mixture firmly into the bottom of a 9-inch springform pan. Bake for 10 minutes, then remove from the oven and let cool.

In a large mixing bowl, beat the softened cream cheese until smooth. Gradually add in the granulated sugar, sour cream, vanilla extract, lemon zest, and salt, mixing until fully incorporated. Add the eggs one at a time, mixing well after each addition.

Pour the cream cheese filling over the cooled crust. Bake in the preheated oven for 50-60 minutes, or until the center is set and only slightly jiggly. Turn off the oven and leave the cheesecake inside for 1 hour to cool gradually.

Remove the cheesecake from the oven and allow it to cool at room temperature for another hour. Once cooled, refrigerate for at least 4 hours or overnight. Before serving, top with fresh berries mixed with powdered sugar and garnish with mint leaves.
