    Prepare the Ingredients

    Start by seasoning the beef with salt and black pepper. Cut the bacon into small pieces and chop the onions, carrots, and garlic.

    Cook the Bacon

    In a large Dutch oven, heat olive oil over medium heat. Add the diced bacon and cook until crispy. Remove the bacon and set aside, leaving the rendered fat in the pot.

    Brown the Beef

    In the same pot, add the beef chunks in batches, searing them on all sides until browned. Remove the beef and set aside.

    Sauté the Vegetables

    Add the chopped onions, carrots, and garlic to the pot. Sauté until softened, about 5 minutes.

    Deglaze the Pot

    Pour in the red wine, scraping up any browned bits from the bottom of the pot. Let it simmer for a few minutes.

    Combine and Simmer

    Return the beef and bacon to the pot. Add the beef broth, thyme, bay leaf, and mushrooms. Bring to a boil, then reduce heat to low, cover, and simmer for about 2 to 3 hours, or until the beef is tender.

    Adjust seasoning with salt and black pepper to taste. Remove the bay leaf before serving.
