Burrito Filling

Cook the Ground Beef
In a large skillet over medium heat, add the ground beef. Cook, breaking it apart with a wooden spoon, until browned, about 8-10 minutes. Drain excess grease.

Add Seasoning
Sprinkle the taco seasoning over the cooked beef. Stir to combine, and add 1/4 cup of water. Cook for an additional 5 minutes until the water has evaporated and the beef is well-coated with seasoning.

Combine Other Ingredients
In a large mixing bowl, combine the cooked beef, black beans (drained and rinsed), corn, and half of the Mexican cheese blend. Mix until evenly combined.

Chop Cilantro
Finely chop the fresh cilantro and fold into the burrito filling mixture. Set aside.

Prepare Tortillas
Warm the large flour tortillas in a dry skillet over low heat for about 30 seconds on each side, or until pliable.

Assemble Burritos
On each tortilla, add a generous scoop of the burrito filling, a slice of avocado, a handful of lettuce, a spoonful of sour cream, and a drizzle of salsa.

Wrap the Burrito
Fold the sides of the tortilla inwards, then roll from the bottom up to create a tight burrito. Repeat with remaining tortillas and filling.

Serve
Cut each burrito in half and serve with extra salsa on the side.
