Preparing the Calamari

Rinse the fresh calamari under cold water. Remove the head and innards, then slice the body into rings about 1/2 inch thick. Pat dry with paper towels.

In a mixing bowl, combine the all-purpose flour, cornstarch, salt, black pepper, paprika, and garlic powder. Mix well until all dry ingredients are evenly distributed.

Dredge the calamari rings in the flour mixture, ensuring each piece is well coated. Shake off any excess flour and set aside.

In a large pot or deep skillet, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). Use a thermometer for accuracy.
