Make the Crust

In a mixing bowl, combine the flour, sugar, and salt. Cut in the butter until the mixture resembles coarse crumbs. Stir in cold water, a tablespoon at a time, until the dough comes together. Form into a disk, wrap in plastic wrap, and refrigerate for at least 30 minutes.

Roll Out the Dough

Preheat the oven to 350°F (175°C). On a floured surface, roll out the chilled dough to fit a 9-inch tart pan. Transfer to the pan, pressing it into the edges. Trim any excess dough.

Blind Bake the Crust

Prick the bottom of the crust with a fork and line it with parchment paper. Fill with pie weights or dried beans. Bake for 15 minutes, then remove the weights and parchment and bake for an additional 10 minutes until golden. Remove from oven and set aside.

In a mixing bowl, whisk together the maple syrup, heavy cream, eggs, vanilla extract, and salt until smooth and well combined.

Pour the filling mixture into the pre-baked tart crust, spreading it evenly.
