Preparation
Prep the Liver
Gently clean the duck or goose liver, removing any visible veins and membranes. Rinse under cold water and pat dry with paper towels.
Seasoning
Sprinkle the liver with salt and white pepper evenly on both sides. Then, pour the cognac or Armagnac over the liver, ensuring it is well coated.
Chilling
Wrap the liver tightly in plastic wrap and refrigerate for at least 2 hours, preferably overnight, to allow the flavors to meld.
Cooking
Preheat the Oven
Preheat your oven to 120°C (250°F).
Cooking the Liver
Remove the liver from the refrigerator and unwrap it. Place it in a baking dish and cover it loosely with aluminum foil. Bake for 30-40 minutes until the internal temperature reaches 60°C (140°F).
Cooling
Remove the liver from the oven and let it cool at room temperature for about 15 minutes. Then, refrigerate until fully chilled.
Serving
To serve, slice the foie gras and serve it on toasted brioche with fig jam and garnish with micro greens or salad greens.
