Mussels Recipe

Prepare mussels
Rinse mussels under cold water, scrub shells to remove debris and pull off beards. Discard any mussels with cracked shells or that do not close when tapped. Place cleaned mussels in a bowl and keep refrigerated until ready to cook.

Sweat aromatics
In a large, heavy-bottomed skillet or Dutch oven over medium heat, melt 1 tablespoon butter with 1 tablespoon olive oil. Add the minced shallots and cook, stirring, until translucent and soft, about 2–3 minutes. Add the minced garlic and cook an additional 30–45 seconds until fragrant, being careful not to brown the garlic.

Deglaze and reduce
Increase heat to medium-high and pour in the white wine to deglaze the pan, scraping up any browned bits. Bring the wine to a simmer and let it reduce by about one-third, about 2–3 minutes. Season with the kosher salt, black pepper, and red pepper flakes.

Finish broth
Remove the lid and immediately add the remaining 1 tablespoon butter to the pot, swirling to melt. Stir in the heavy cream and fresh lemon juice, simmer gently for 30–60 seconds to warm the cream and finish the sauce. Taste and adjust seasoning with more salt, pepper, or lemon juice if needed.

Serve
Sprinkle the chopped fresh parsley over the mussels. Spoon mussels and the broth into shallow bowls and serve immediately with crusty bread for dipping into the sauce.
