    Preheat and prepare

    Preheat oven to 425°F (220°C). Line a large baking sheet with parchment paper and set aside.

    Wash and cut

    Wash and peel the 2 medium sweet potatoes if desired. Cut them into even fries about 1/4–1/2 inch thick (aim for uniform size so they cook evenly). Place cut fries into a large bowl of cold water.

    Soak

    Soak the cut fries in cold water for 20–30 minutes to remove excess starch (this helps make them crisper). If short on time, soak at least 10 minutes.

    Dry

    Drain the fries and spread them on a clean kitchen towel or paper towels. Pat thoroughly dry — moisture will prevent crisping.

    Coat

    In a large dry bowl, toss the dried fries with 1 teaspoon cornstarch until evenly dusted. Drizzle 2 tablespoons olive oil over the fries and toss to coat. Sprinkle 3 teaspoons smoked paprika, 1 teaspoon garlic powder, 1 teaspoon ground cumin, 1 teaspoon salt, and 1 teaspoon black pepper over the fries and toss until evenly seasoned.

    Arrange on sheet

    Arrange the fries in a single layer on the prepared baking sheet with space between pieces — overcrowding will cause steaming and sogginess. Use two sheets if necessary.

    Bake and flip

    Bake at 425°F (220°C) for 20 minutes. After 20 minutes, remove the sheet, flip the fries with a spatula, rotate the pan 180°, and return to the oven for an additional 10–12 minutes, or until edges are browned and fries are tender. Baking time can vary with thickness and oven; watch for crisp edges not charred centers.

    If you want extra crispness, broil on high for 1–2 minutes while watching closely. Remove from oven, sprinkle with chopped fresh parsley (optional) and a light extra pinch of salt if needed. Serve immediately.

    While fries are baking, combine 1 tablespoon mayonnaise, 1 teaspoon ketchup, 1 teaspoon hot sauce, 1 teaspoon lemon juice and 1/4 teaspoon salt in a small bowl. Whisk until smooth and refrigerate until ready to serve.
