Forfrying and oven items
Preheat the oven and/or deep fryer according to package instructions. If using a deep fryer set to 175–180°C (347–356°F) and preheat the oven to 200°C (392°F). Fry the kroketten, bitterballen and frikandellen in batches: deep-fry kroketten and bitterballen for 3–4 minutes until golden-brown and heated through; frikandellen 4–5 minutes until hot and crisp. Transfer to paper towels to drain. For items labeled oven/frozen (mini-pizza's, kipsaté sticks, mini-kaassoufflés), arrange on baking trays with space between and bake according to the package (typically 10–15 minutes at 200°C), turning once if recommended, until heated through and crisp. Keep fries separate.

Fries
Cook the fries according to your preferred method: deep-fry at 175–180°C for 3–4 minutes for thin fries (or twice-fry method: 160°C 4–5 min to blanch, then 190°C 2–3 min to crisp), or bake in the oven on a tray at 220°C for 20–30 minutes, turning halfway, until golden and crisp. Season immediately with salt. Keep fries warm in a low oven (90–100°C) on a tray while finishing other items.
- 3
Kipsaté and peanut sauce
If your kipsaté is frozen and requires cooking, follow package instructions (bake or fry until 75°C internal). Warm the pindasaus gently in a small pan over low heat, stirring, or microwave in 20-second bursts until warm. If desired, stir in 1–2 tablespoons of warm water or coconut milk to reach a dipping consistency. Transfer to a small bowl and sprinkle with a pinch of chopped peanuts (optional).
- 4
Sauce preparation
Place mayonaise, currysaus, zoete chilisaus and mosterd into small serving bowls. Mix fijngehakte augurk into a small bowl with a little mayo to create a quick tartar-like relish if desired. Arrange sauces across the platter so guests can reach each easily. Keep warm sauces (pindasaus) in heatproof bowls on a warm plate if necessary.
- 5
Finishing and assembly
On a large wooden board or platter, arrange the fries in a central heap or in a separate bowl. Group fried snacks (kroketten, bitterballen, frikandellen, mini-kaassoufflés, mini-pizza's and kipsaté) in distinct clusters around the fries. Add small bowls with each sauce placed evenly. Garnish frikandellen with finely chopped onion and a small spoon of currysaus if serving frikandel speciaal; add lemon wedges near the kipsaté and scatter chopped parsley over the fried items for freshness. Sprinkle gebakken uitjes lightly over a few items for crunch. Place lettuce leaves on one side as a fresh accent and tuck in snack bakjes and wooden prikkers for easy serving.

Serving
Serve the platter hot. Provide tongs or pronged picks and small plates for guests. Replenish fried items from the oven if the platter cools — reheat at 180°C for 5–8 minutes to restore crispness. Leftovers can be refrigerated within two hours and reheated in an oven at 180°C for 8–10 minutes.
Garnish & final touches
- 7
Sprinkle the chopped parsley and gebakken uitjes over the platter just before serving. Add lemon wedges and arrange extra napkins and small bowls for used bones or crumbs. If you prepared the augurk-mayo relish, place it next to mosterd and currysaus for variety.
