Slice and marinate
Trim any fat from the chicken breasts and slice each breast into 6–8 even strips about 3/4-inch wide. Place strips in a bowl or zip-top bag. Whisk together buttermilk, egg, hot sauce (if using), 1 tsp salt and 1 tsp black pepper. Pour over chicken so pieces are submerged. Cover and refrigerate for at least 30 minutes and up to 8 hours (longer yields more tender, flavorful strips).

Prepare dry mixes
In a shallow dish combine 1 cup all-purpose flour and 1/4 cup cornstarch. Add 1 tsp paprika, 1 tsp garlic powder, 1/2 tsp onion powder, 1/2 tsp dried oregano, 1/4 tsp cayenne (if using), 1 tsp salt and 1/2 tsp black pepper. Whisk thoroughly so spices are evenly distributed. In a separate shallow dish place 1 cup panko breadcrumbs.

Make wet dredge
In a wide bowl whisk together 1/2 cup flour and 1/2 cup cold water until smooth; it should be the consistency of thin pancake batter. This sticky dredge helps the panko adhere and gives extra crispness.

Heat oil
Pour 2 cups vegetable oil into a deep skillet or heavy-bottomed pot to a depth of about 1 inch. Heat over medium-high until the oil reaches 350°F (175°C). If you don't have a thermometer, test by dropping a pinch of flour into the oil — it should sizzle and brown slowly.

Dredge chicken
Remove a few strips from the buttermilk at a time, letting excess drip off. First toss strips in the flour-spice mixture to coat lightly, then dip into the wet flour-water batter ensuring an even, thin coating. Finally press each strip into the panko breadcrumbs so the crumbs adhere and form an even crust. Place breaded strips on a wire rack while you finish the rest.

Fry in batches
Carefully add 4–6 breaded strips (do not overcrowd) to the hot oil. Fry, turning occasionally, until golden brown and cooked through, about 3–4 minutes per side (internal temperature 165°F / 74°C). Adjust heat as needed to maintain 325–350°F; if oil is too hot the crust will brown before chicken cooks. Remove to a wire rack set over a baking sheet or to paper towels to drain briefly.

Keep warm
If cooking multiple batches, keep finished strips warm in a 200°F (95°C) oven on a wire rack while you fry the rest so they stay crisp.

Transfer chicken strips to a serving platter. Sprinkle chopped parsley over the strips if using and serve immediately with lemon wedges and dipping sauce on the side.
