Cook fries

If using frozen fries: preheat oven or deep fryer per package (oven: 425°F/220°C). Spread fries in a single layer on a baking sheet and bake or fry until golden and crispy, 18–25 minutes for oven or 3–5 minutes if deep-frying. If using fresh russets: cut into fries, rinse, pat dry, and deep-fry at 325°F/160°C for 3–4 minutes until soft, drain, then fry at 375°F/190°C for 2–3 minutes until crisp. Transfer fries to a large mixing bowl.

Immediately season fries with 1 tsp salt and 1/4 tsp black pepper; toss gently to coat.

Meat (choose one)

If meat is already cooked (recommended): reheat gently in a skillet over medium heat with 1–2 tablespoons oil for 2–4 minutes until warmed through. For birria: drain most of the braising liquid so toppings are not soggy; reserve a small amount if you want dipping sauce on the side.

Chop or shred the meat into bite-sized pieces and keep warm until assembly.

Queso dip

In a small saucepan over low heat, combine 6 oz processed melting cheese (cubed) and 1/2 cup milk. Stir constantly until smooth and melted, about 5 minutes.

Stir in 1/2 cup shredded monterey jack, 1/2 jalapeño (finely chopped, optional), 1/4 tsp ground cumin and 1/4 tsp salt. Warm through for 1–2 minutes, adjust consistency with more milk (1–2 tbs) if needed. Keep warm on lowest heat or in a small thermal container.

Guacamole

In a medium bowl, mash 2 ripe avocados with 1 tablespoon lime juice until mostly smooth with some texture.

Fold in 2 tsp minced red onion, 1 tbsp chopped cilantro, 1/2 tsp salt and 1/8 tsp black pepper. Taste and adjust lime or salt as desired. Cover tightly with plastic wrap touching the surface to prevent browning until ready to serve.

Pico de gallo

Combine 2 diced roma tomatoes, 1/4 cup finely diced white onion, 2 tbsp chopped cilantro and 1/2 minced jalapeño in a bowl.

Add 1 tablespoon lime juice and 1/4 tsp salt, toss gently. Let sit 5–10 minutes for flavors to meld.

Assembly & Finish

Place seasoned fries on a large platter or divide among 2–3 plates.

Evenly spread the warmed meat over the fries.

Drizzle 1/2–3/4 cup warm queso dip over the meat and fries, reserving extra for serving if desired.

Sprinkle 3/4 cup shredded cheddar or Mexican blend evenly over the hot queso so it melts slightly.

Spoon dollops of guacamole (about 3–4 tablespoons per serving) and add 1/4 cup pico de gallo across the fries.

Add 1/2 cup sour cream in dollops or drizzle using a squeeze bottle. Scatter 2 tbsp sliced green onions and pickled jalapeños on top.

If adding Hot Cheetos: crush 3 oz lightly and sprinkle over the top for an extra crunchy, spicy finish.

Serve immediately with lime wedges on the side and extra queso or birria consommé if desired.
