Cantarito Cocktail (per 1 serving)

Method

Prepare glass and rim

1

Chill and salt rim

If possible, chill a clay or rocks glass (cantarito-style clay cup or pint/rock glass) in the freezer for 10 minutes. Run a lime wedge around the glass rim, then dip the rim into a shallow dish of sea salt to coat evenly. Set the glass aside.

Build single serving

2

Fill the chilled, salted glass about three-quarters full with ice cubes (approximately 1 cup).

3

Add 2 oz reposado tequila, 0.5 oz fresh lime juice, 1 oz fresh orange juice, 1 oz fresh grapefruit juice, and 0.5 tbs agave syrup directly into the glass.

4

Stir gently with a bar spoon for 10–15 seconds to combine and slightly chill the mixture. Ensure agave is incorporated.

5

Top with approximately 2 oz club soda to add effervescence. Taste and adjust sweetness with a little more agave (about 1/4 tbs) if desired.

6

Garnish with a lime wedge and an orange or grapefruit slice on the rim. Serve with a straw or short stirring spoon.

Make-ahead / Pitcher method (4 servings)

7

In a pitcher, combine 8 oz reposado tequila, 2 oz fresh lime juice, 4 oz fresh orange juice, 4 oz fresh grapefruit juice, and 2 tbs agave syrup. Stir until the agave is dissolved.

8

Fill four chilled, salted glasses with about 1 cup ice each. Divide the cocktail base evenly among the glasses.

9

Top each glass with 2 oz club soda. Stir each briefly to integrate the soda.

10

Garnish each glass with a lime wedge and an orange or grapefruit slice. Serve immediately.

Notes & tips

11

Traditional cantaritos are served in clay cups which help keep the drink cold and slightly mellow the flavors—use if available. For a sharper grapefruit note use freshly squeezed pink grapefruit. Adjust sweetness to taste; agave works best with tequila. If you prefer a spicier, savory rim, mix sea salt with a pinch of Tajín or ground chile.
