An oversized toasted English muffin topped with Canadian bacon, two over easy eggs and pimento hollandaise sauce. Served with a side of Bradley's grits.

Toast the English Muffins
Cut the English muffins in half and toast them until golden brown.

Cook the Canadian Bacon
In a skillet over medium heat, cook the Canadian bacon slices until heated through and slightly crispy, about 2-3 minutes per side.

For the Pimento Hollandaise

Prepare the Hollandaise Base
In a double boiler or a heat-proof bowl over simmering water, whisk together the egg yolks and lemon juice until the mixture is thickened and pale.

Add the Butter
Slowly drizzle in melted butter while continuously whisking until the sauce is thick and emulsified.

Incorporate Pimento Cheese
Remove from heat and stir in pimento cheese, salt, and black pepper until well combined.

Stir in butter and cook for an additional minute or until creamy.
