Method
Prepare the Biscuits

Mix Dry Ingredients
In a large mixing bowl, whisk together 2 cups of all-purpose flour, 1 tablespoon of baking powder, 1 teaspoon of baking soda, and 0.5 teaspoon of salt until well combined.

Cut in Butter
Add 0.5 cups of cold unsalted butter, cut into small cubes, to the flour mixture. Use a pastry cutter or your fingers to work the butter into the flour until the mixture resembles coarse crumbs.

Add Buttermilk
Pour in 0.75 cups of buttermilk and stir gently until just combined. Do not overmix the dough.

Shape Biscuits
Turn the dough out onto a floured surface and gently knead it a few times. Pat it into a 1-inch thick rectangle. Use a biscuit cutter to cut out biscuits and place them on a baking sheet lined with parchment paper.

Bake Biscuits
Preheat your oven to 425°F (220°C). Bake the biscuits for 12-15 minutes or until they are golden brown. Remove from oven and let cool slightly.
Fry the Chicken Thighs

Marinate Chicken
In a bowl, soak 4 bone-in chicken thighs in 1 cup of buttermilk for at least 30 minutes, or preferably overnight for best flavor.

Prepare the Dredging Mixture
In another bowl, mix together 1.5 cups of all-purpose flour, 1 tablespoon of paprika, 1 teaspoon of garlic powder, 1 teaspoon of onion powder, 1 teaspoon of salt, and 0.5 teaspoon of black pepper.

Dredge Chicken
Remove chicken from buttermilk and allow excess to drip off. Dredge each thigh in the flour mixture, ensuring it is fully coated.

Heat Oil
In a large skillet, heat 2 cups of vegetable oil over medium heat until it reaches 350°F (175°C).

Fry Chicken
Carefully add the chicken thighs to the hot oil, cooking in batches if necessary. Fry for about 7-10 minutes per side, or until golden brown and cooked through (internal temperature should reach 165°F/75°C).

Drain Chicken
Once cooked, remove the chicken from the oil and place on a paper towel-lined plate to drain excess oil.
Assemble the Dish

Place 3 biscuits on a serving plate. Top each biscuit with a fried chicken thigh.

Top the chicken with a generous amount of B&B pickles and drizzle with hot honey to taste.
