Cocktail Preparation

Mix the Cocktail
In a cocktail shaker, combine 2 oz of Tom Cat Gin, 1 oz of honey syrup, and 1 oz of fresh squeezed lemon juice. Fill the shaker with ice.

Shake
Shake vigorously for about 15 seconds until well chilled.

Strain
Strain the mixture into a chilled coupe glass.
Honey Foam Preparation

Prepare Honey Syrup
In a small saucepan, combine 2 tbs of honey and 2 tbs of water. Heat over low until the honey is dissolved and the mixture is well combined. Allow to cool.

Make the Foam
In a mixing bowl, add 1 large egg white and the cooled honey syrup. Use an electric mixer to whip the mixture on high speed until soft peaks form, about 2-3 minutes.

Top the Cocktail
Spoon the honey foam over the cocktail in the coupe glass, creating a fluffy layer on top.
