Potatoes

Method

Preparation

  1. 1

    Prep the Potatoes

Peel the russet potatoes and cut them into small cubes (about 1 inch).

  2. 2

    Boil the Potatoes

Place the cubed potatoes in a large pot. Cover with water, add 1 tsp of salt, and bring to a boil over high heat. Cook for about 15 minutes or until the potatoes are fork-tender.

Cheese Mixture

  1. 3

    Mix the Cheese

While the potatoes are boiling, in a large mixing bowl, combine the softened cream cheese, sour cream, shredded cheddar cheese, garlic powder, onion powder, and black pepper. Mix well until smooth and creamy.

Combine and Bake

  1. 4

    Combine Potatoes and Cheese Mixture

Drain the potatoes and add them to the cheese mixture. Stir gently until all the potatoes are well coated with the cheese mixture.

  2. 5

    Prepare the Topping

In a small bowl, combine the panko breadcrumbs with melted butter and grated Parmesan cheese. Mix until the breadcrumbs are evenly coated.

  3. 6

    Assemble and Bake

Preheat your oven to 350°F (175°C). Transfer the cheesy potatoes mixture into a greased 9x13 inch baking dish. Sprinkle the breadcrumb topping evenly over the top. Bake for 25-30 minutes or until the topping is golden brown and crispy.
