Grits Preparation

    Cook the Grits

    In a medium saucepan, bring 4 cups of water to a boil. Gradually whisk in 1 cup of stone-ground grits. Reduce heat to low, cover, and simmer for 20-25 minutes, stirring occasionally until the grits are thick and creamy.

    Add Creaminess

    After the grits have thickened, stir in 1 cup of milk, 2 tablespoons of butter, 1 teaspoon of salt, 1 teaspoon of black pepper, and 1 cup of cheddar cheese. Mix well until cheese is melted and fully incorporated.

Shrimp Preparation

    Sauté the Shrimp

    In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add 2 minced garlic cloves and sauté for 1 minute until fragrant.

    Season and Cook

    Add 1 pound of large shrimp and 1 tablespoon of cajun seasoning to the skillet. Cook for 3-4 minutes, stirring occasionally, until shrimp are pink and cooked through.

    Add Green Onions and Lemon Juice

    Stir in 1 cup of chopped green onions and 2 tablespoons of lemon juice. Cook for an additional 1-2 minutes, allowing flavors to meld.

    To serve, spoon a generous portion of the creamy grits onto a plate. Top with the sautéed shrimp mixture and garnish with 2 tablespoons of chopped parsley.
