Prepare the crust
In a medium bowl, combine the graham cracker crumbs, granulated sugar, and melted butter.

Mix until the crumbs are evenly coated and the mixture resembles wet sand.

Press the mixture firmly into the bottom and up the sides of a 9-inch pie pan.

Bake in a preheated oven at 350°F (175°C) for 8-10 minutes, or until lightly golden and fragrant.

Make the filling
In a large bowl, whisk together the egg yolks and key lime juice until well combined.

Gradually add the sweetened condensed milk and lime zest, mixing until smooth and fully incorporated.

Assemble the pie
Pour the filling into the prepared graham cracker crust, spreading it evenly.

Bake the pie
Bake in the oven for an additional 15 minutes at 350°F (175°C), until the filling is set but still slightly jiggles in the center.

Remove the pie from the oven and let it cool to room temperature, then refrigerate for at least 3 hours to set.
