Main Hash Preparation

Cook the Bacon
In a large skillet, cook the chopped bacon over medium heat until crispy. Remove from the skillet and set aside, leaving the bacon fat in the pan.

Sauté Vegetables
In the same skillet, add olive oil. Add diced onions and red bell pepper. Sauté for about 5 minutes until soft.

Add Tomatoes and Bacon
Stir in the fire-roasted tomatoes and crispy bacon. Cook for an additional 3-5 minutes until everything is heated through.

Assemble
Serve the hash topped with the sunny side up eggs.

Mash Potatoes
In a mixing bowl, mash the potatoes with butter, heavy cream, garlic powder, salt, and black pepper until smooth and creamy.

Add Cheese
Fold in the cheddar cheese until melted and well combined.
Cheddar Drop Biscuit Preparation

Preheat Oven
Preheat the oven to 425°F (220°C).

Mix Dry Ingredients
In a mixing bowl, combine flour, baking powder, and salt.

Cut in the butter until the mixture resembles coarse crumbs.

Stir in the cheddar cheese and milk until just combined.
