Main Hash Preparation

    Cook the Bacon

    In a large skillet, cook the chopped bacon over medium heat until crispy. Remove from the skillet and set aside, leaving the bacon fat in the pan.

    Sauté Vegetables

    In the same skillet, add olive oil. Add diced onions and red bell pepper. Sauté for about 5 minutes until soft.

    Cook Potatoes

    Add diced potatoes to the skillet, season with salt and black pepper, and cook for 10-15 minutes until golden and tender, stirring occasionally.

    Add Tomatoes and Bacon

    Stir in the fire-roasted tomatoes and crispy bacon. Cook for an additional 3-5 minutes until everything is heated through.

    Fry the Eggs

    In a separate pan, fry the eggs sunny side up to your desired doneness.

    Serve the hash topped with the sunny side up eggs.

Potato Gratin Mash Preparation

    Cook Potatoes

    Peel and chop the potatoes. Boil in a pot of salted water until tender, about 15-20 minutes. Drain well.

    In a mixing bowl, mash the potatoes with butter, heavy cream, garlic powder, salt, and black pepper until smooth and creamy.
