Preparing the Fried Chicken

Marinate the Chicken
In a large bowl, combine chicken pieces and buttermilk. Ensure all pieces are well-coated. Cover and refrigerate for at least 1 hour, preferably overnight.

Prepare the Coating
In another bowl, mix together flour, cornstarch, paprika, garlic powder, onion powder, salt, black pepper, and cayenne pepper.

Coat the Chicken
Remove marinated chicken from the refrigerator. Dredge each piece in the flour mixture, shaking off any excess flour.

Fry the Chicken
In a large pot or deep fryer, heat vegetable oil to 350°F (175°C). Fry the chicken pieces in batches until golden brown and cooked through, about 12-15 minutes. Drain on paper towels.

In a large bowl, whisk together flour, baking powder, sugar, and salt.

Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix; a few lumps are okay.

Preheat your waffle iron and lightly grease it. Pour an appropriate amount of batter into the waffle iron and cook according to the manufacturer's instructions until golden brown.

Place a waffle on a plate, top with a crispy fried chicken piece, and repeat for additional servings.
