Preparation of Vegetables

Preheat the Oven
Preheat your oven to 425°F (220°C).

Prepare Baby Potatoes
Wash the baby potatoes and cut them in half. In a large bowl, toss them with 1 tablespoon of olive oil, salt, and black pepper until well coated.

Prepare Carrots and Zucchini
Peel the carrots and cut them into bite-sized pieces. Cut the zucchini into rounds. Add them to the bowl with the potatoes and toss with another tablespoon of olive oil, salt, and pepper.

Roast the Vegetables
Spread the vegetables on a baking sheet in a single layer and roast in the preheated oven for 25-30 minutes, or until tender and golden, tossing halfway through the cooking time.

Make the Lemon-Garlic Butter Sauce
In a small saucepan, melt the butter over medium heat. Add minced garlic (finely chop the garlic cloves) and cook for about 1 minute until fragrant. Squeeze in the juice of one lemon and stir to combine.
