Wash and peel the Russet potatoes. Cut them into thin strips, about 1/4 inch thick. Rinse the cut potatoes in cold water to remove excess starch, then pat them dry with a clean kitchen towel.

In a large heavy-bottomed pot or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). You can test the temperature by dropping a small piece of potato into the oil; if it sizzles, it's ready.

Carefully add a batch of soaked and dried potato strips to the hot oil, being careful not to overcrowd the pot. Fry them for about 5-7 minutes or until they turn golden brown and crispy.

Use a slotted spoon to remove the fries from the oil and transfer them to a plate lined with paper towels to drain excess oil. While they are still hot, season with salt, black pepper, and any optional ingredients like garlic powder or paprika.
