Doughnut Preparation

Activate Yeast
In a small bowl, combine warm milk (110°F/43°C) with the active dry yeast and a teaspoon of sugar. Allow to sit for about 5-10 minutes until frothy.

Mix Dry Ingredients
In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, and salt.

Knead the Dough
Turn the dough onto a floured surface and knead for about 5-7 minutes until smooth and elastic.

First Rise
Place the dough in a greased bowl, cover with a kitchen towel, and let it rise in a warm area for about 1-2 hours or until doubled in size.

Shape Doughnuts
Once risen, punch down the dough and roll it out to about 1/2 inch thick. Use a doughnut cutter to cut out shapes and place them on a parchment-lined baking sheet. Let them rise again for about 30 minutes.

Fry Doughnuts
Heat oil in a deep fryer or large pot to 350°F (175°C). Fry the doughnuts in batches, about 1-2 minutes on each side until golden brown. Drain on paper towels.

Prepare Glaze
In a medium bowl, whisk together powdered sugar, milk, vanilla extract, and food coloring (if using) until smooth.

Glaze Doughnuts
While the doughnuts are still warm, dip the tops into the glaze and allow excess to drip off. Place on a wire rack to set.
