    Prepare the Apples

    Wash, peel, core, and slice the apples into thin pieces. Place them in a large pot.

    Combine Ingredients

    Add the apple juice, water, and sugar to the pot with the sliced apples. Stir well to mix.

Cooking

    Cook the Mixture

    Place the pot on the stove over medium heat. Allow the mixture to come to a simmer, stirring occasionally. Cook for about 30 minutes until the apples are soft.

    Add Spices

    Add the cinnamon sticks and nutmeg to the pot. Stir and let it simmer for an additional 10 minutes to infuse the flavors.

    Cool the Mixture

    Remove the pot from heat and allow the mixture to cool completely.

Finishing

    Strain the Mixture

    Once cooled, strain the mixture through a fine mesh strainer or cheesecloth into a large bowl or pitcher to remove the solids.

    Combine with Alcohol

    Pour the strained liquid back into the pot and add the Everclear (or high-proof grain alcohol). Stir well to combine.

    Bottle and Store

    Pour the moonshine into sterilized mason jars or bottles. Seal tightly and store in a cool, dark place for at least 2 weeks to allow the flavors to meld.
