Buffalo Wings (6 pcs)
Prep and fry wings
Pat the 6 chicken wing pieces dry with paper towels. Season evenly with 1 tsp salt, 1/2 tsp black pepper, and 1/2 tsp garlic powder. Heat a deep skillet or pot with 500 ml vegetable oil to 175°C (350°F). Carefully add wings in a single layer (work in batches if needed) and fry for 10–12 minutes until golden and cooked through (internal temp 74°C /165°F). Remove and drain on a wire rack or paper towels.
Make buffalo sauce and toss
In a small saucepan over low heat, melt 2 tbs butter. Add 1/2 cup hot sauce and 1 tbs honey; stir and warm until combined but not boiling. Place fried wings in a large bowl, pour the warm buffalo sauce over them, and toss to coat evenly. Keep warm until serving.
Cheesy Sticks (3 pcs)
Set up a breading station: flour in one shallow bowl, beaten egg in a second, and panko breadcrumbs mixed with 1 tsp dried Italian seasoning in a third. If using frozen mozzarella sticks, coat each stick in flour (shake off excess), dip in egg, then press into breadcrumbs to fully coat. Freeze coated sticks on a tray for 10–15 minutes to prevent cheese leakage.
Chicken Tenders (3 pcs)
Marinate
Place 3 chicken tenderloins in a bowl with 1/2 cup buttermilk and 1 tsp hot sauce (optional). Cover and refrigerate for 20–30 minutes (or up to 2 hours) to tenderize and flavor.
Breading and fry
Whisk together 3/4 cup flour, 2 tsp cornstarch, 1 tsp paprika, 1/2 tsp garlic powder, 3/4 tsp salt, and 1/2 tsp black pepper in a shallow dish. Remove tenders from marinade, letting excess drip off, and dredge thoroughly in the flour mixture. Heat oil to 175–180°C (350–360°F). Fry tenders in batches for 4–6 minutes until golden and internal temp reaches 74°C (165°F). Drain on a rack or paper towels.
Loopy Fries
Preheat oven to 220°C (425°F) if baking, or heat oil to 180°C (350°F) for frying. If oven-baking: toss 350 g frozen curly fries with 1 tbs oil, 1/2 tsp salt, and 1/4 tsp paprika on a baking sheet in a single layer. Bake for 18–22 minutes, turning once, until crisp. If deep-frying: fry in batches for 3–4 minutes until golden. Drain on paper towels and season with a little extra salt while hot.
Cheesy Garlic Bread (3 slices)
Preheat oven broiler or set oven to 200°C (400°F). Mix 2 tbs softened butter with 1 tsp minced garlic and 1 tsp chopped parsley. Spread the garlic butter evenly on 3 slices of baguette. Top each slice with shredded mozzarella (about 0.25 cup per slice) and sprinkle with 2 tbs grated parmesan (divided). Place on a baking sheet and bake for 6–9 minutes, or broil 1–2 minutes, until cheese is melted and edges are golden. Watch closely to avoid burning.
Onion Rings (4 pcs)
Separate the onion into rings and choose 4 large intact rings. Soak rings in 1/2 cup buttermilk for 10 minutes. Meanwhile whisk 3/4 cup flour, 2 tsp cornstarch, 1/4 tsp baking powder, 1/2 tsp salt, and 1/4 tsp black pepper in a bowl. Drain rings slightly, then dredge through the dry mix to coat. Heat oil to 175–180°C (350–360°F) and fry rings 1–2 minutes per side until golden and crisp. Drain on paper towels.
