Form patties
Place the ground beef in a bowl. Add kosher salt, black pepper, smoked paprika and Worcestershire sauce. Gently mix with your hands until just combined — do not overwork. Divide into two equal portions and form into slightly wider-than-bun patties about 3/4" thick, pressing a shallow dimple in the center of each to prevent doming during cooking.
Grill patties
Place patties on the hot grill or skillet. Cook undisturbed for 3–4 minutes until a good sear forms. Flip and cook 2–3 minutes for medium (adjust time for desired doneness). During the last 1 minute of cooking, place a slice of cheddar on each patty, close the grill lid or cover skillet briefly to melt the cheese.
Spicy Special Sauce
While patties rest, in a small bowl combine mayonnaise, ketchup, sriracha, pickled jalapeño brine, apple cider vinegar, smoked paprika, garlic powder, and salt. Whisk until smooth and taste; adjust heat with more sriracha or brine if desired. Chill while finishing other components.

Prepare vegetables
Slice the tomato into 1/4" rounds. Core and slice the bell pepper into 1/2" strips. Peel and cut the onion into 1/2" rounds, separating into rings. Slice the fresh jalapeños into thin rounds (remove seeds for milder heat). Rinse and dry lettuce leaves.
Buns & Assembly
Assemble burger
Spread about 1 tablespoon of the spicy special sauce on the bottom bun. Place a lettuce leaf, then the cheesy beef patty. Top the patty with 2–3 grilled bell pepper strips, a couple of grilled onion rings, 2–3 jalapeño slices (more if you like spicy), and a tomato slice. Spoon another 1 tablespoon of sauce on the top bun and place it on the burger.
Serve
Serve immediately while hot with extra sauce on the side. Recommend pairing with fries or a crisp salad.
