Method
Prep and breading
Freeze cheese
If using string cheese, keep each stick whole. For block mozzarella cut into 5 equal sticks about 4–4.5 inches long and 3/4 inch thick. Place the 5 sticks on a parchment-lined tray and freeze for 30–45 minutes until very firm — this prevents excessive melting when frying.
Set up dredging station
Place the flour in a shallow bowl. In a second bowl whisk the eggs with the milk until combined. In a third shallow bowl combine breadcrumbs, grated Parmesan, Italian seasoning, garlic powder, 1/2 tsp salt, and black pepper; mix well.
First coat
Working with one cheese stick at a time, roll it in flour to coat completely, shaking off excess.
Dip the floured stick into the egg mixture, then press firmly into the breadcrumb mixture to coat evenly. For extra security, repeat the egg wash and breadcrumb step a second time so each stick has a double coating. Place breaded sticks back on a tray and return to the freezer for at least 15 minutes to set the breading.
Frying
Heat oil
Pour vegetable oil into a medium saucepan or deep skillet to a depth of about 1 to 1.5 inches (about 1.5–2 cups depending on pan). Heat over medium-high until oil reaches 350°F (175°C). If you don’t have a thermometer, test by dropping a small breadcrumb — it should sizzle and brown within 30–45 seconds.
Fry cheese sticks
Carefully add up to 2–3 breaded cheese sticks (do not crowd) and fry 30–60 seconds per side, turning once, until golden brown. Total fry time is short — watch closely so cheese does not burst out. Remove with a slotted spoon to a wire rack or paper towel-lined plate to drain. If desired, keep in a warm oven (200°F / 95°C) between batches.
Season
Immediately sprinkle the hot sticks with the remaining 2.5 tsp salt evenly (or to taste) and a pinch of extra grated Parmesan if using.
In-house dipping sauce
While the sticks chill during freezing or while frying, combine 1/2 cup marinara, 2 tbs mayonnaise, 1 tbs sour cream (or Greek yogurt), 1 tsp finely chopped parsley, 1/4 tsp red pepper flakes, 1/2 tbs lemon juice, 1/4 tsp salt, and 1/8 tsp black pepper in a small bowl. Whisk until smooth and adjust seasoning to taste. Transfer to a small serving ramekin.
