1. Chill glass & ingredients

Place a large wine glass (or rocks glass) in the freezer for 5–10 minutes or fill it with ice to chill while you prepare ingredients. Ensure Prosecco, Aperol, and soda water are well chilled.

Mixing the cocktail

2. Add ice

Fill the chilled wine glass about three-quarters full with fresh ice. Using plenty of ice keeps the cocktail properly chilled and maintains the intended dilution.

3. Pour Prosecco

Measure and pour 3 oz (about 90 ml) of chilled Prosecco into the glass over the ice. Pouring sparkling wine first helps preserve the bubbles when adding other ingredients.

4. Add Aperol

Add 2 oz (about 60 ml) of chilled Aperol. Pour gently so the layers stay attractive and the drink mixes without losing too much carbonation.

5. Top with soda

Add 1 oz (about 30 ml) of chilled soda water to top the drink. Adjust the quantity to taste if you prefer a slightly lighter spritz.

6. Stir gently

Give the drink one or two gentle short stirs with a bar spoon to integrate the ingredients without flattening the Prosecco.

7. Garnish & serve

Garnish with an orange wheel placed on the rim or floated in the glass. Serve immediately while cold and effervescent.

Adjustments & tips

8. If you prefer a drier spritz, increase the Prosecco by 0.5 oz and reduce Aperol by 0.5 oz. For a lighter drink, increase soda to 1.5–2 oz. Use a good-quality Prosecco for best flavor; avoid champagne if you want the classic Italian profile.
