Prepare okra
Rinse the okra pods and pat them thoroughly dry with a towel. Trim the stem tips and discard any tough ends. Cut the okra lengthwise into thin julienne strips (about 1/8–1/4 inch wide). Dry the cut okra on paper towels to remove surface moisture — this helps reduce sliminess and ensures a crisper fry.

Make dry mix
In a medium bowl combine cornstarch, all-purpose flour, rice flour (if using), baking powder, 1/2 teaspoon salt (reserve remaining salt for seasoning), black pepper, garlic powder, and red chili powder. Whisk to evenly distribute the dry ingredients.

Make light batter
Add cold water to the dry mix a tablespoon at a time and whisk until you have a thin but slightly coating batter (should be thinner than pancake batter — about the consistency of heavy cream). The batter should cling lightly to the okra without pooling excessively. If it becomes too thick, thin with a little more cold water.

Coat okra
Place the julienned okra in a large bowl. Spoon the batter over the okra and gently toss with your hands or tongs until most pieces are lightly coated. Work quickly so the okra remains dry and crisp. If any clumps form, separate them gently so fries stay individual.

Heat oil
In a heavy-bottomed skillet or deep frying pan, heat about 1 cup of vegetable oil over medium-high heat to 350°F (175°C). If you don't have a thermometer, test by dropping a small bit of batter — it should sizzle and rise steadily without burning immediately.

Fry in batches
Carefully add small handfuls of the battered okra into the hot oil, spreading them so they are not clumped together. Fry in batches for 2–3 minutes, turning occasionally, until golden brown and crisp. Avoid overcrowding the pan, which lowers oil temperature and yields soggy fries. Remove fries with a slotted spoon or spider and drain on a wire rack or paper towels.

Season while hot
While the fries are still hot, sprinkle them with the remaining 1/2 teaspoon salt and the chaat masala, tossing gently to coat evenly. Taste and adjust seasoning if needed — add a little more chaat masala or black pepper to preference. If you like a brighter finish, add a light squeeze of lime over each batch.

Garnish and serve
Transfer the seasoned okra fries to a serving plate. Garnish with chopped cilantro if using and serve immediately with lime wedges on the side for extra tang. Explain to diners that these are best eaten hot and crisp.
