Carrot Halwa Filling

Method

Carrot Halwa Filling

    Prepare ingredients: Peel and grate carrots finely (use a box grater or food processor). Measure dairy and spices.

    Heat a wide heavy skillet over medium heat. Add 3 tbs unsalted butter and melt until foaming, then reduce heat to medium-low.

    Add the grated carrots and a pinch of salt to the skillet. Sauté, stirring often, for 6–8 minutes until carrots soften and release moisture.

    Pour in the whole milk and stir, scraping any caramelized bits from the pan. Continue to cook until most liquid has evaporated, another 4–6 minutes.

    Add the sweetened condensed milk and sugar. Stir to combine and cook over medium-low heat, stirring frequently to prevent sticking, until the mixture thickens to a spreadable, slightly sticky consistency (about 8–10 minutes).

    Stir in ground cardamom, saffron (if using), chopped pistachios or almonds, and adjust salt to taste. Cook 1–2 more minutes. Remove from heat and cool to near room temperature (about 20–30 minutes); the filling should be thick but spreadable.

Brown Butter Cake

    Preheat oven to 350°F (175°C). Grease two 8-inch round cake pans with melted butter or oil and dust lightly with flour; line bottoms with parchment for easier removal.

    Brown the butter

    Place 12 tbs (1.5 sticks) unsalted butter in a light-colored saucepan over medium heat. Melt and cook, swirling occasionally, until butter foams, browns, and gives a nutty aroma (about 6–8 minutes). Watch closely to avoid burning. Remove from heat and let cool until warm but not hot (about 10 minutes).

    Whisk together dry ingredients: in a bowl, sift or whisk 2.5 cups all-purpose flour, 2 tsp baking powder, 1/2 tsp baking soda, 3/4 tsp salt, 1 tsp ground cinnamon, and 1/4 tsp ground ginger. Set aside.

    In a large bowl, whisk together the eggs, 1.5 cups granulated sugar and 1/2 cup light brown sugar until combined. Whisk in the cooled brown butter and 2 tsp vanilla extract until smooth.

    Alternate adding the dry ingredients and 1 cup buttermilk to the wet mixture: add one-third of the dry ingredients and mix until incorporated, then half the buttermilk, then another third of dry, the remaining buttermilk, and finish with the remaining dry. Mix until just combined — do not overmix.

    Divide batter evenly between the two prepared pans (about 18–20 oz batter per pan). Smooth tops and tap pans once on the counter to remove large air bubbles.

    Bake for 22–28 minutes, rotating pans halfway through, until a toothpick inserted into the center comes out with a few moist crumbs. Remove from oven and cool in pans for 10 minutes, then invert onto wire racks and cool completely (about 1 hour).

Chai Spice Cream Cheese Icing

    Ensure cream cheese (10 oz) and 4 tbs butter are fully softened. In a large bowl or stand mixer fitted with a paddle, beat cream cheese and butter together on medium speed until smooth, about 2–3 minutes.

    Add 1 tsp vanilla, 1 tsp chai spice, 1 tsp lemon juice and 1/4 tsp salt. Mix to combine.

    Gradually add 3 cups powdered sugar, 1 cup at a time, mixing on low speed after each addition until incorporated. Increase speed to medium and beat until light, smooth, and spreadable (about 2 minutes). If icing is too thin, chill 10–15 minutes; if too stiff, add 1–2 tsp milk or cream.

Assembly & Finish

    Level the cooled cake layers if domed: use a serrated knife or cake leveler to create flat tops so layers sit evenly.

    Place one cake layer on a serving plate or cake board. If desired, brush the top lightly with 1–2 tsp simple syrup to keep it moist (optional).

    Spread the cooled carrot halwa filling evenly over the first layer, leaving a 1/4-inch border to prevent overflow (use about all of the prepared halwa; if very loose, ensure it's thickened). The filling should form a roughly 1/2–3/4 inch layer.

    Carefully place the second cake layer on top, pressing gently to adhere.

    Apply a thin crumb coat of chai cream cheese icing over the top and sides to seal crumbs. Chill the cake in the refrigerator 20–30 minutes to set the crumb coat.

    Finish by applying the remaining icing in a thicker, even layer. Smooth with an offset spatula. Sprinkle extra chopped pistachios or toasted coconut around the edge or center as garnish.

    Refrigerate the assembled cake for at least 30 minutes before slicing to allow the filling and icing to settle. Bring to room temperature 20–30 minutes before serving for best texture.
