Toast & prep crunchy components
If puffed rice is slightly soft or stale, dry-roast it for 2–3 minutes in a large skillet over medium heat, stirring constantly, then let cool. If using store-bought roasted peanuts that are raw, roast 3 oz peanuts in a skillet for 4–5 minutes until golden and fragrant; cool. If using fresh pooris, break 8 small pooris into bite-sized pieces; keep all crunchy components separate and dry until assembly to preserve crispness.

In a very large mixing bowl, combine 4 cups puffed rice, 1 cup corn poha, 3 cups boondi, 1 cup sev and the roasted peanuts. Gently toss to mix, taking care not to crush the boondi excessively.

Toss onions, cilantro, green chilies and pomegranate seeds together in a small bowl and set aside until assembly to keep juices separated from dry mix.
Chutneys & Seasoning

Mix chutneys and seasonings: in a small bowl combine 1/2 cup tamarind chutney, 1/4 cup green chutney, 2 tbsp fresh lime juice, 1 tsp bhel masala (or chaat masala), 1/2 tsp salt, 1/4 tsp red chili powder and 1/4 tsp black salt if using. Taste and adjust — chutneys should be balanced sweet, tangy and spicy. Keep this dressing ready.
Assembly (Serve Immediately)

Right before serving, transfer the large bowl of dry mix (puffed rice/boondi/sev/peanuts/corn poha) to a clean, very large mixing bowl if needed. Make a well in the center.

Gently and thoroughly toss everything together with two large spoons or hands — fold from the bottom up — so chutneys coat the ingredients but the mix remains light and not soggy. Taste and add additional tamarind chutney or green chutney, lime juice, or salt as needed.

Fold in the broken pooris at the end to add large crunchy pieces. Sprinkle reserved sev on top (about 1/4 cup) for immediate serving so it stays crisp.
