Grilled Chicken

    Prepare and season the chicken

    Pound the chicken breasts to even thickness (about 1/2 inch) for even cooking. Rub with olive oil, then season with garlic powder, smoked paprika, salt, and black pepper.

    Grill the chicken

    Heat a grill pan or outdoor grill over medium-high heat. Grill the chicken for 5–7 minutes on each side or until fully cooked (internal temperature of 165°F/74°C). Let rest for 5 minutes, then slice thinly across the grain.

Sautéed Onions

    Cook the onions

    Heat olive oil in a skillet over medium heat. Add sliced onions and a pinch of salt. Sauté for 10–12 minutes, stirring occasionally, until golden brown and caramelized. Set aside.

Jalapeño Aioli

    Make the aioli

    In a small bowl, whisk together mayonnaise, chopped jalapeño, minced garlic, lime juice, and a pinch of salt. Mix well until smooth. Cover and refrigerate until ready to use.

Sandwich Assembly

    Toast the ciabatta

    Lightly butter the cut sides of the ciabatta rolls (optional). Toast on a skillet or grill pan until golden and crispy, about 2–3 minutes.

    Assemble the sandwich

    Spread jalapeño aioli on both cut sides of each ciabatta roll. Layer sliced grilled chicken, sautéed onions, and 2 slices of cheddar cheese per sandwich. Close the sandwich.

    Melt the cheese

    Place the assembled sandwiches back in the skillet or grill pan, press gently, and cook over medium-low heat until the cheese is melted, about 3–4 minutes per side. Serve hot.
