Grilled Spicy Chicken

Prepare marinade
In a bowl, whisk together soy sauce, fish sauce, brown sugar, minced garlic, grated ginger, lime juice, sriracha, and vegetable oil.

Marinate chicken
Add chicken thighs to the marinade, turning to coat evenly. Cover and refrigerate for at least 30 minutes, preferably 2 hours.

Grill chicken
Preheat grill or grill pan over medium-high heat. Grill chicken for 4–5 minutes per side or until cooked through and slightly charred. Let rest for 5 minutes, then slice thinly.
Pickled Vegetables

Make pickling liquid
In a small saucepan, combine vinegar, water, sugar, and salt. Heat over medium heat, stirring until sugar and salt are dissolved.

Sriracha Mayo

Mix sauce
In a small bowl, combine mayonnaise, sriracha, lime juice, and garlic powder. Stir until smooth. Refrigerate until ready to use.

Spread sriracha mayo
Generously spread sriracha mayo on both cut sides of the baguette.

Add fillings
Layer sliced grilled chicken, pickled vegetables, sliced cucumber, sliced jalapeños, and fresh cilantro on the baguette.

Close the sandwich and serve immediately, or wrap for later enjoyment.
