Method

Tuna Preparation

    Season the Tuna

    Rub the Ahi tuna steak with olive oil and coat it evenly with blackening spice on both sides.

    Cook the Tuna

    Heat a skillet over medium-high heat. Once hot, add the tuna steak and sear for 2-3 minutes on each side until blackened and cooked to desired doneness. Remove from heat and let it rest.

Lobster Potatoes Preparation

    Prepare the Potatoes

    Peel and chop the potatoes into small cubes. Boil them in salted water until tender, about 15-20 minutes.

    Make the Lobster Mash

    Drain the potatoes and return them to the pot. Add butter, heavy cream, cooked lobster meat, salt, and black pepper. Mash until smooth and creamy.

Wasabi Cream Preparation

    Mix the Wasabi Cream

    In a small bowl, combine sour cream and wasabi paste. Stir until well blended. Adjust the wasabi to taste.

Plating

    Assemble the Dish

    On a plate, form a base with the lobster potatoes. Slice the blackened tuna steak and place it on top. Drizzle sweet chili glaze over the tuna and add a dollop of wasabi cream on the side. Garnish with sushi ginger.
