Prepare the Stuffing

Sauté the Spinach
In a skillet over medium heat, add a drizzle of olive oil and add the fresh spinach. Sauté until wilted, about 3-4 minutes.

Prepare the Filling
In a mixing bowl, combine the sautéed spinach, cream cheese, feta cheese, minced garlic, lemon juice, salt, and black pepper. Mix until well combined and set aside.

Preheat your oven to 375°F (190°C).

Prepare Salmon Fillets
Pat the salmon fillets dry with a paper towel. Use a sharp knife to create a pocket in each fillet by slicing horizontally, being careful not to cut all the way through.

Spoon the prepared stuffing into each salmon pocket, ensuring they are generously filled.

Brush the outside of each stuffed salmon fillet with olive oil and sprinkle with paprika, salt, and black pepper.
Bake the Salmon

Place the stuffed salmon fillets on a baking sheet lined with parchment paper. Bake in the preheated oven for 20-25 minutes or until the salmon is cooked through and flakes easily with a fork.
