    In a large pot, bring water to a boil. Add 1 tsp of salt to the boiling water. Carefully add the corn on the cob and let it boil for about 5-7 minutes until tender. Remove the corn and let it cool slightly.

    Grilling the Corn (optional)

    For a smoky flavor, you can grill the boiled corn. Preheat your grill to medium-high heat. Place the boiled corn on the grill and cook for about 5 minutes, turning occasionally, until you see grill marks.

Making the Topping

    Mixing the Topping

    In a mixing bowl, combine 1 cup of mayonnaise, 1 cup of crumbled Cotija cheese, 1 tsp of chili powder, 2 tbs of lime juice, 1 tbs of chopped cilantro, and 1 tsp of garlic powder. Mix well until all ingredients are fully incorporated.

Assembling the Dish

    Once the corn has cooled slightly, spread 1 tbs of unsalted butter over each ear of corn. Then, generously coat each ear of corn with the topping mixture you prepared in the previous step.
