Lobster Newburg Cream Sauce

Method

Steak Preparation

    Season the Filet

    Pat the filet mignon medallions dry with paper towels. Drizzle with olive oil and season both sides with salt, black pepper, and garlic powder.

    Sear the Steak

    In a hot skillet over medium-high heat, add the seasoned filet medallions. Sear for about 4-5 minutes on each side for medium-rare. Adjust cooking time according to your preferred doneness.

    Rest the Steak

    Once cooked, remove the medallions from the skillet and let them rest for 5 minutes before serving.

Lobster Mashed Potatoes Preparation

    Boil the Potatoes

    Peel and cut the potatoes into quarters. Place them in a large pot of salted water and bring to a boil. Cook until tender, about 15-20 minutes.

    Mash the Potatoes

    Drain the boiled potatoes and return them to the pot. Add butter, heavy cream, and lobster meat. Mash until smooth and creamy. Stir in chopped chives, and season with salt to taste.

Lobster Newburg Cream Sauce Preparation

    Saute Shallots

    In a saucepan, melt butter over medium heat. Add the finely chopped shallots and sauté until they become translucent, about 3-4 minutes.

    Make the Sauce

    Add heavy cream, cooked lobster meat, cognac, salt, and black pepper to the saucepan. Stir and let simmer for 5-7 minutes until the sauce thickens slightly.

Asparagus Preparation

    Prepare the Asparagus

    Trim the ends of the asparagus spears and toss with olive oil, salt, and black pepper.

    Steam the Asparagus

    Steam the asparagus in a steamer basket for 4-6 minutes, or until tender but still crisp.
