Preparation of Chicken

Preheat the Grill
Preheat your grill or prepare a live oak fire until the coals are hot and glowing.

Prepare the Chicken
Rinse the bone-in chicken under cold water and pat dry with paper towels.

Season the Chicken
In a small bowl, mix together olive oil, salt, black pepper, and garlic powder. Rub this mixture all over the chicken, ensuring it is evenly coated.

Sear the Chicken
Place the chicken skin-side down on the grill or over the live oak fire. Sear for about 5-7 minutes, until the skin is crispy and well-browned.

Glaze the Chicken
After searing the chicken, flip it over and brush a generous amount of the mango glaze over the chicken. Reserve some glaze for basting later.
Cooking the Chicken

Continue Cooking
Close the grill lid and continue cooking the chicken for another 30-35 minutes, basting every 10 minutes with the reserved mango glaze, until the internal temperature reaches 165°F (75°C).

Rest and Serve
Once cooked, remove the chicken from the grill and let it rest for 10 minutes before serving. Serve with additional mango glaze on the side.
