Pasta Dough

Prepare the Dough
In a large mixing bowl, combine the all-purpose flour and salt. Make a well in the center and crack the eggs into the well. Using a fork, gradually whisk the flour into the eggs until a dough forms.

Knead the Dough
Transfer the dough to a floured surface and knead for about 10 minutes until smooth. Wrap in plastic wrap and let it rest for 30 minutes.
Short Rib Filling

Sear the Short Ribs
Season the short ribs with salt and black pepper. In a large pot over medium-high heat, sear the ribs on all sides until browned. Remove and set aside.

Shred the Meat
Once cooked, remove the short ribs and shred the meat. Discard the bones and return the shredded meat to the pot. Mix well and set aside to cool slightly.
Lobster Cream Sauce

Prepare the Lobster
In a saucepan, melt the butter over medium heat. Add minced garlic and sauté until fragrant. Add the heavy cream and sofrito, stirring to combine.

Add the Lobster
Chop the lobster tail into bite-sized pieces and add to the sauce. Season with salt and black pepper to taste. Simmer for 5-10 minutes until lobster is cooked through and the sauce thickens slightly.
Grilled Pork Belly Straws

Prepare the Pork Belly
Season the pork belly with salt and black pepper. Preheat a grill or grill pan over medium heat.

Grill the Pork Belly
Cut the pork belly into thin strips and grill for about 4-5 minutes per side, until crispy and golden. Remove from the grill and set aside.
Assemble the Dish

Roll Out Pasta
After the dough has rested, roll it out thinly using a pasta machine or rolling pin. Cut into squares for filling.

Fill the Pasta
Place a small spoonful of the short rib filling in the center of each pasta square. Fold over and seal the edges to form pillows.

Cook the Pasta
Bring a large pot of salted water to a boil. Cook the pasta pillows in batches for 3-4 minutes until they float to the top. Remove and drain.

Serve the Dish
Toss the cooked pasta pillows in the lobster cream sauce. Plate and top with grilled pork belly straws. Serve immediately.
