    Bake the Potatoes

    Preheat the oven to 400°F (200°C). Wash the russet potatoes thoroughly and poke several holes in each potato with a fork. Place the potatoes directly on the oven rack and bake for 45-60 minutes, or until tender when pierced with a fork.

Filling Preparation

    Prepare the Filling

    Once the potatoes are baked, remove them from the oven and allow them to cool slightly. Cut each potato in half lengthwise and scoop out the insides into a mixing bowl, leaving a thin layer of potato in the skins.

    Mix the Ingredients

    To the potato insides, add the butter, sour cream, shredded cheddar cheese, chopped jalapeño peppers (remove seeds for less heat), chopped green onions, salt, and black pepper. Mash the mixture until smooth and well combined.

Assembly

    Fill the Potato Skins

    Spoon the filling back into the potato skins, mounding it slightly on top.

Baking

    Top with Cheese

    Sprinkle the additional shredded cheddar cheese on top of each filled potato half.

    Return the filled potatoes to the oven and bake for an additional 20 minutes, or until the cheese is melted and bubbly.
