Trim the stem ends of the Brussels sprouts and remove any yellow or damaged outer leaves. Rinse them under cold water and pat dry with a paper towel.

Slice the Brussels sprouts in half lengthwise. If they are particularly large, you can quarter them to ensure even cooking.
