Prepare the Pork Belly
Start by preheating the oven to 300°F (150°C). Score the skin of the pork belly in a crosshatch pattern. Season generously with salt and black pepper.

Cook the Pork Belly
Place the pork belly in a roasting pan and cook it in the oven for 2 to 2.5 hours or until the meat is tender and the skin is crispy. Once done, let it rest for 10 minutes before slicing.

Prepare the Scallops
Pat the diver scallops dry with paper towels to remove excess moisture and season them with salt and black pepper.

Chop the Cilantro
Finely chop the fresh cilantro for garnishing.

Sear the Scallops
Heat olive oil in a large skillet over medium-high heat. Once hot, add the scallops and sear for about 2-3 minutes on each side until they develop a golden brown crust and are opaque in the center.

Plating
On a serving plate, place a slice of the crispy pork belly, top with seared scallops, and drizzle with mango chutney. Garnish with chopped cilantro and serve with lime wedges on the side.
