    Season the Filet Mignon

    Remove the filet mignon from the refrigerator and allow it to come to room temperature for about 30 minutes. Pat the steaks dry with paper towels. Season both sides generously with salt, black pepper, and fresh rosemary.

    Wrap the Filet Mignon in Bacon

    Take each slice of smoked bacon and wrap it around the filet mignon, securing the ends with toothpicks if necessary. Ensure that the bacon covers as much of the steak as possible for even cooking.

    Sear the Filet Mignon

    Heat the olive oil in a large skillet over medium-high heat. Once the oil is shimmering, add the bacon-wrapped filet mignon to the skillet. Sear for about 4-5 minutes on each side until the bacon is crispy and the steak is browned.

    Finish Cooking in Oven

    Preheat your oven to 400°F (200°C). After searing, transfer the skillet to the oven and roast for an additional 8-10 minutes for medium-rare, or until it reaches your desired doneness. Use a meat thermometer to check the internal temperature (130°F for medium-rare).

    Rest the Steaks

    Once cooked, remove the skillet from the oven and let the filet mignon rest for about 5 minutes. This allows the juices to redistribute throughout the meat for a more tender steak.
