    Preheat your oven to 350°F (175°C). In a medium bowl, mix the graham cracker crumbs, 0.5 cups of granulated sugar, and melted butter until well combined. Press the mixture firmly into the bottom of a 9-inch springform pan to form an even layer.

    Bake the crust in the preheated oven for 10 minutes. Remove from the oven and let it cool while you prepare the filling.

    Mix the filling

    In a large mixing bowl, beat the softened cream cheese until smooth and creamy. Gradually add 1 cup of granulated sugar and mix until well combined. Add the sour cream and vanilla extract, mixing until fully incorporated.

    Add the eggs one at a time, mixing on low speed just until combined after each addition. Be careful not to overmix.

    Pour the filling over the cooled crust in the springform pan. Bake in the preheated oven for 55-60 minutes or until the center is set but slightly jiggly. Turn off the oven and let the cheesecake cool in the oven with the door slightly ajar for 1 hour.

    Once the cheesecake is fully chilled, spread the topping mixture evenly over the surface of the cheesecake. Use a kitchen torch to caramelize the sugar until golden and crispy. Alternatively, you can broil it in the oven for a few minutes, watching closely to avoid burning.
