Method
Cake Preparation
- 1
- 2
Melt Butter and Chocolate
In a microwave-safe bowl, combine the unsalted butter and semisweet chocolate chips. Microwave in 30-second intervals, stirring after each, until fully melted and smooth.
- 3
Mix Sugar and Eggs
In a large mixing bowl, whisk together the granulated sugar, large eggs, and large egg yolks until the mixture is thick and pale.
- 4
Combine Mixtures
Slowly pour the melted chocolate mixture into the egg mixture, whisking continuously until fully incorporated.
- 5
Add Dry Ingredients
Sift the all-purpose flour and add it to the chocolate-egg mixture along with the vanilla extract and a pinch of salt. Gently fold until just combined; do not overmix.
- 6
Fill Ramekins
Divide the batter evenly among the greased ramekins, filling each about ¾ full.
- 7
Bake
Bake in the preheated oven for about 12-14 minutes, or until the edges are firm but the center is soft and jiggly.
- 8
Serve
Remove the cakes from the oven and let them cool for 1 minute. Carefully invert each ramekin onto a plate and gently lift to release the cake. Serve warm with a scoop of vanilla ice cream.
