Method
Cake Preparation
- 1
Preheat the Oven
Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- 2
Mix Dry Ingredients
In a large mixing bowl, combine the all-purpose flour, granulated sugar, cocoa powder, baking powder, baking soda, and salt. Whisk until well mixed.
- 3
- 4
Combine Mixtures
Gradually add the wet ingredients to the dry ingredients, mixing until just combined. Stir in the boiling water until the batter is smooth.
- 5
Bake the Cakes
Divide the batter evenly between the prepared cake pans. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
- 6
Cool the Cakes
Remove from the oven and let the cakes cool in the pans for 10 minutes. Then, transfer to wire racks to cool completely.
Peanut Butter Frosting Preparation
- 7
Beat Butter and Peanut Butter
In a mixing bowl, beat the unsalted butter and creamy peanut butter together until smooth and creamy.
- 8
Add Sugar and Cream
Gradually add the powdered sugar and heavy cream, mixing on low speed. Once combined, add the vanilla extract and beat until fluffy.
Chocolate Ganache Preparation
- 9
Heat the Cream
In a small saucepan, heat the heavy cream over medium heat until it just begins to simmer.
- 10
Melt the Chocolate
Remove from heat and add the semi-sweet chocolate chips. Stir until melted and smooth. Let cool slightly.
Assembling the Cake
- 11
Layer the Cake
Once the cakes are completely cool, place one layer on a serving plate and spread a generous amount of peanut butter frosting on top.
- 12
Add Second Layer
Place the second cake layer on top and frost the top and sides of the cake with the remaining peanut butter frosting.
- 13
Pour Ganache
Drizzle or pour the chocolate ganache over the top of the frosted cake, allowing it to drip down the sides.
- 14
Add Toppings
If desired, sprinkle chopped peanuts on top and serve each slice with a scoop of ice cream.
