Preparation

  1. 1

    Prepare the Filet Mignon

Remove the filet mignon from the refrigerator and let it sit at room temperature for 30 minutes before cooking. This helps ensure even cooking.

  2. 2

    Wrap with Bacon

Take the two slices of smoked bacon and wrap them around the filet mignon. Secure the bacon with toothpicks if necessary.

  3. 3

    Season the Steak

Season both sides of the filet mignon with salt and black pepper to taste. Drizzle olive oil over the steak to enhance flavor and help with browning.

Cooking

  1. 4

    Preheat the Pan

Heat a cast-iron skillet or heavy-bottomed pan over medium-high heat until it's hot enough that a drop of water sizzles on contact.

  2. 5

    Sear the Steak

Place the wrapped filet mignon in the hot skillet. Sear each side for about 3-4 minutes, or until a golden brown crust forms.

  3. 6

    Finish Cooking

Reduce the heat to medium and continue cooking for an additional 4-5 minutes for medium-rare doneness, or until the internal temperature reaches 130°F (54°C). Adjust cooking time according to your preferred doneness.

  4. 7

    Rest the Steak

Remove the filet mignon from the skillet and let it rest on a cutting board for 5-10 minutes. This allows the juices to redistribute for a more tender steak.
